Aud’Etour offers you a 4-day wine-tasting stay in the department of Aude, in the South of France : the Weekend Break!

Discover different recognized vineyards of the region for a stay rich in gastronomy, culture and know-how.

Our first stop, just south of Carcassonne, is set in rolling vineyards and olive groves.  This boutique Domaine is run by a very experienced team, who export their wine all over the world and are gaining a reputation for their range of wines truly inspired by the different terroirs of Languedoc. We will be able to stroll in the olives groves and vineyards, which are also dotted with lavender bushes and then be able to taste 6 different wines from their range.

A tasting with our wine expert and guide Jean-Luc. In this tasting  you will discover the principal grape varieties that make up the unique taste of the Languedoc.

8:30 a.m

Depart for our first vis to a wine-co-operative in the Corbières region.  ‘Cave Co-Ops’ have played (and continue still today) to play a vital role in the social and economic life of this region.  Not often visited by the public, they are the backbone of the wine industry and we feel it’s really important to acknowledge them and the work that they do.

11:30 a.m

A short drive over to the Minervois region, we will visit a Domaine with an interesting family history.  A warm welcome from the wine-maker and a very informative visit to his cellars followed by a typical homemade French lunch eaten at the Domaine with the winemaker at the head of the table!

3:30 p.m

To walk of lunch, we will drive a short way to a unique feature found in the area -the ‘Capitelles’ – with a walk through the ‘garrigue’ with its perfumes of lavender and thyme. Another short drive to our last tasting in the relatively unknown region of the Cabardès, which reflects perfectly it’s terroir and that you will have been happy to discover!

10 a.m

Depart for one of the most modern Domaines in the Limoux area.  A visit to the vineyards that  that surround the domaine and then a visit to the cellars and tasting from their range of award winning wines.  ThIs Domaine also has a very popular restaurant, where we will be enjoying their wines with lunch.

3 p.m

A short drive across the valley, to the Abbey of St Hilaire – the legend of sparkling wine was born here and for good reason.  A guided visit of the Abbey, which dates from the 12 century and it’s unique refectory, where the secrets of the origins of sparkling wine will be revealed.

To round of this day, its only natural that we visit a Domaine who roots go way back, with one of the most well known local families, who produce great Blanquette de Limoux.  You will have the chance to visit the cellars dug by the grandparents, marvel at the antique harvesting and bottling equipment on display along with the surprising methods used to make this delicious sparkling wine.

The owner will then open his personal wine cellar and you will taste a selection of vintage sparkling wines dating back to the 1980’s – a really unique chance to see how the wines have aged and appreciate the qualities of this liquid gold. This is accompanied with homemade pâtés, local charcuterie and Pyrenean cheeses.

9 a.m

Depart hotel with bags to a different type of Domaine. As this is co-owned by the wine unions and the chamber of agriculture and it is known as an ‘experimental domaine’.  Here, they undertake training for wine growers and plant many different varieties of grapes. That is in order to test their resistance or if they flourish in different soil types and conditions.

They do dozens of ‘micro-vinifications’ every year -so small batch wines, in order to test out new methods and blends.  All these are stored in a ‘wine-library’ where they even have wines made from unknown varieties.  You will be shown around by the director so this is the chance to ask all your most technical questions!

A free lunch in town to finish of this mini-break wine-tour, the end of a great long weekend.
